Well, there is actually no reason to turn them off, in some corners they can indeed be helpful as an indication for yourself on where to brake, so you would be rather stupid not to use this help just because it looks a bit "noobish". :)
Of course you should not follow this line with your car on the whole track and always brake when it turns red because that is often not the best way to go but none of the pros would be doing that anyway.
