I usually use VT - SW:P - (VE when we doing bosses) - MB - MF, when VT & SW:P runs out i renew them... But my dps is kinda low :( here are stats for a ZA run...

also do i need to change my build? i am overcapped now i got 103hitrating with 4/5 SHadow Focus. And i still need the Shatar enchant on my head wich comes with some more hitrating.

So with that enchant i got 117 hitrating, still need to change some hitrating gems with spelldmg.

Another thing, i should use my trinket with what spells? At this time i use the icon of the silver .. with mindblast , i also use inner focus with MB.

You got any WWS from a 25man raid you have attended with using consumables? (flask, oil, dps food)

ur gemming is kinda weird with using alot of non pure dmg gems like in ur belt you are using dmg/sta for some reason and at the same time using that while not getting socket bonus.
What you should do is basically get all non pure dmg gems switched out with pure dmg gems (in some cases where there are non'blue 1-2 socket items with one or both being yellow socket and socket bonus granting additional dmg then haste/dmg is the way to go).
Also with losing some hit with switching gems you should get Belt of Blasting crafted and also Bracers of Nimble Thought which both are 2nd best in-slot items (Anetheron's Noose might be better if you already have alot of hit).
PvP Guardian neck with dmg/haste stats (and a +12dmg gem in it) is also 2nd best neck ingame only beaten by Eredar Twins neck
Get your enchanting up to lv.360 and get those ring enchants (honored Keepers of Time)
Try to do MGT Heroic also for Timbal's Focusing Crystal and try to get Hex Shrunken Head from Hex Lord Malacrass in ZA, then you got 2 very strong trinkets which are only being replaced by Skull of Gul'dan (Illidan) and Shifting Naaru Sliver (M'uru)

Your spec is fine since you need to have like 140+ hit to say to urself that you got too much hit. reason for that is that imp.VE is heavily underrated talent which you should always go for if you get enough hit to switch points from Shadow Focus to something else.
Tho i wonder why you only took 2/3 Focused Mind (ofc if you dont have major mana problems then its ok but its quite alot of mana saving)

Always use trinket for reapplying dots since it will keep ticking for the spelldmg amount you have when trinket is up if the trinket power fades out before the dot runs out the dot will keep ticking as if the trinket was up (reapplying ofc will make it tick for normal values if trinket is not up)

for spell useage, casting Mind Blast as soon as it is off cooldown is the best, should even use Mind Blast if its ready over reapplying sw-p first (this doesnt apply with VT tho as its more important). Use sw-d of cooldown all the time also

a recommended starting rotation for a boss fight would look something like this:
trinket-VT-SW:P-VE-Inner Focus-MB-SW:D-MF~~
and then you reapply dots when they run off but always prio with VT and if SW:P and MB runs out/is ready at the same time then you should cast your MB first and then reapply SW:P right after (this works even better if you later can get 4 piece bonus of t6) since in the end MB is the best dps spell you got. Redo SW:D also when its off cooldown but dots/MB has prio over it. When using your trinket again then make sure that your dots will be running out and being reapplied before the trinket effect runs out for maximum useage

I think the hit cap for a spellcaster is 14% and now before wotlk shadowpriest are still able to specc 10% hit if they want too. soo i would go for more spelldmg gems. ;)

My shadowpriest ;P as you can se i got 1 talet to much in Shadow Focus. ;P

the spellhit cap for casters is 16% not 14% so no Elfbeach you dont got a talent pt. too much. you got pretty much just enough hit :)
